Banana Cream - homemade

BANANA CREAM PIE etc

This was originally called Vanilla Cream Pie as it served as a basis for several kinds – for instance – make the filling then slice 3 bananas into a cooled 9” pasty shell; top with the Vanilla Cream Pie filling and Meringue.  YUM.  But you can substitute brown sugar for the granulated sugar and increase butter to 3T. to make Butterscotch Pie – you can add 1/3 cup of coconut and then a bit on top after the meringue has been baked for a Coconut Cream Pie.

I used to make my gpa’ one every time we’d go down from Purdue to visit with him – he loved ‘’em but the very last time I used pudding & pie filling and a boughten crust. He said, “This isn’t too bad but make me one next time!”  He did a couple of days later and I always felt sooo guilty. Last time I made my father-in-law one he had fallen and busted his head.  He wanted to say thank you to the nurses and doctors who took care of him so I made him one and brought the stuff to cut it up and dish it out to them. They were so appreciative and he loved it too – his last pie. He got worse and spent a week in hospice before passing but at least I got one last good pie to him.  

This is a bit hard to make but well worth it!

¾ C. Sugar
1/3 C. All-purpose flour or 3 T. cornstarch
¼ tsp. salt
2 C. Milk
3 slightly beaten egg yolks (save the whites for the meringue)
2 T. butter or margarine
1 tsp. vanilla
1 9” baked pastry (pie) shell
1 recipe Meringue
Oven 350

In saucepan, combine sugar, flour and salt; gradually stir in milk.  Cook and stir over medium heat till mixture boils and thickens then cook 2 minutes longer.  Remove from heat.
Stir small amount hot mixture into the yolks; return to hot mixture; cook 2 more minutes, STIR constantly.  Remove from heat.  Add butter and vanilla; cool to room temperature. To prevent a crust from forming put clear plastic wrap or waxed paper directly on the top; touching surface of the hot pudding clear to sides of bowl. Pour into baked pastry shell.


Meringue: Beat the 3 eggs whites with ¼ tsp. cream of tartar and ½ tsp. vanilla till soft peaks form.  Gradually add 6 T. sugar beating till stiff peaks form and all sugar is dissolved. Spread atop pie sealing to pastry. Bake in moderate oven (350) about 12 minutes or till meringue is golden.  COOL & ENJOY!
